Vegan Chicken Parmesan



This was absolutely delicious and full of flavor - the best part is that it's quick to prepare and can be finished within an hour! Most of the items are premade as I didn't have time to do it myself, but it would probably be even tastier if everything was homemade.


(Chicken Seitan Ingredients)

  • 1 Package of Vital Wheat Gluten
  • 1 tbl Original Mrs. Dash
  • 1/2 tsp Garlic Powder, Rosemary and Oregano
  • 1/2 can of Sodium-Free Swanson Vegetable Broth
  • 1/2 tsp of Iodized Salt
  • 3 tbl Extra Virgin Olive Oil (per piece)

(Additional Ingredients)

  • Vegan Cheese
  • Marinara Sauce
  • Oregano
  • Nutritional yeast

(Directions)
  • Combine the dry ingredients and carefully add the broth until it forms a loose but well-formed piece of seitan.
  • Split it up into different pieces and boil them in the rest of the vegetable broth, more Mrs. Dash and a bit of water. Let them cook for about thirty minutes, drain them and then press them dry.
  • Cook each piece in some extra virgin olive oil until the side has cooked and crisped to your liking.
  • Place in a pan, slather it in your marinara sauce, and place on a small slice of vegan cheese.
  • Place in the toaster oven(or regular oven) until sauce is heated and cheese has melted. Sprinkle the pieces with oregano and then some nutritional yeast.

Healthy Hello Kitty Kyaraben




I'm so proud of myself right now - not only is this pretty healthy despite the white rice, it's pretty and delicious too! It's filled with fruits and vegetables and it's what every child would love. The best part is that I formed the rice ball by hand and it's the first HK to turn out correctly! A recipe isn't really required in this case since it's mostly organic fruits and vegetables, but I will include an ingredient list. Hello Kitty's bow is made up of tofu that had been cut out with two Wilton mini-heart cutters and one small cap.


Hello Kitty Bento Ingredients:
Sweet Organic Peppers
Nori
Strawberries
Baby Carrots
Seared Firm Tofu (seasoned with Mrs. Dash)
Spinach Salad
Grapes
Nutritional Yeast + Rice Cheeze (for the nose)
Japanese Sticky Rice
1 Small Raw Rice Stick (to keep the bow together and pinned)

Vegan Croque Madam Panini



I haven't been able to cook much lately, so here's a little tasty piece to snack on. The vegan croque madame, a delicious mix of an Italian cooking technique and French (and technically Japanese)flavors.



(Vegan Croque Madame Ingredients)

  • 2 slices of Whole Wheat Whole Grain Bread
  • 4 pieces of Vegan Ham
  • 1 slice of Soy Mozzarella (you may need to rub water on it)
  • Turmeric, Salt, Pepper, Cracked Red Pepper for color and taste.
  • 2 tbl Good-Quality Olive Oil per piece of bread

(Directions)
  • Cook your tofu with all of the seasonings.
  • Spread a tablespoon of olive oil on one side of both slices of bread.
  • Assemble sandwich with all of the fillings with oiled side on the outside.
  • Heat your press( you can cook in pan, then press down if you don't have one).
  • Cook until bread is golden brown and crisp.
  • Enjoy!

It's Pancake Time!



Inspired by Pendleton Ward's Adventure Time - but edible! None of the images that I took inspiration from are owned from me, they are owned by the people that I mention.  The pancakes are two different flavors, and one is sweet while the other has a savory taste.



(Basic Pancake Mix Ingredients)

  • 2 and 1/2 cups All-Purpose Flour
  • 2 and 1/2 cups Whole Wheat Flour
  • 1/2 tsp Iodized Salt
  • 1/4 cup Agave Nectar
  • 1 tbl Ground Flax Seeds
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • Vegetable Oil (a few tbl per pancake)
  • Water or Soy milk (to mix)
(Jake's Face Ingredients)
  • Basic Pancake Mix
  • Turmeric + Pineapple Juice
  • Chocolate Sauce
(Finn's Face Ingredients)
  • Basic Pancake Mix + Turmeric + Pineapple Juice
  • Fresh Strawberry Juice + Water + 1/2 tsp Lemon Juice (face)
  • Chocolate Sauce

(Directions)
  • Mix the ingredients together
  • Start off your pan onto the lowest heat with a little bit of oil and spoon (or squeeze with a bottle) the pancake mix in.
  • If making Finn's face: make sure to keep it as oval as possible and do the strawberry pancake mix first. Add the hat after then use your spatula to shape everything).
  • Once it has started to bubble up well, firmly shove your spatula under and carefully flip it.
  • For Jake's face: you can just make the shape of his face
  • Once done, let them rest on a paper towel to soak up any extra oil.
  • Decorate with chocolate sauce.
  • Enjoy!

If you want to make the Lumpy Space Princess, use blueberry + blackberry juice for the pancake mix, and for Princess Bubblegum you can just do the same thing as you did with Finn, except reversed.

Silly Raccoon

I'm in love with J.G Quintel, or moreso - his works (and hair) and wanted to show off some things totally inspired by him. This bento features a nice little healthy surprise for Rigby the Raccoon when he tries to get off of his diet. The little rascal thinks that he can eat all of the "french fries" in the bento and get away with no fruits or  vegetables. I'm sorry to say tell him that this is a healthy vegan lunch box.


Rigby's Body:
California Brown Rice (I used a different type, but this works much better)
Nori
Sticky Rice + Soy Sauce (for color)
Steamed Tofu

Make Rigby's body anyway you want to after fluffing the rice. Wrap it up into plastic wrap and with the back of a spoon, drag a dugout for Rigby's stomach. Place the packaged rice into the fridge for about five minutes and steam the white rice. After steaming your sticky rice and mixing it lightly with some good quality soy sauce, unwrap the brown rice package and pack the other rice onto it. Add a pointy nose out of brown rice and stick some nori onto it with a touch of water. Place the hair around Rigby's head, place thin strips of nori there for hair follicles and then place rounds of nori onto Rigby's face. Cut out smaller rounds of tofu and place them onto the nori, then place some nori eyes onto his face. Add a tail and an arm and do whatever els you like with it.

Hello Kitty-Shaped Tofu





I bought the most adorable little Hello Kitty egg mold online and used it to press my tofu. The white one turned out better (in my opinion) and I shaped it like an egg after quartering the package, slicing off the top and bottom and sliced it in half. I boiled it for a minute and then placed it into the egg mold for ten minutes. The other one was just a piece of tofu cut into a square and in half and the process was the same. After its ten minutes in the fridge were up I soaked it in soy sauce for a pretty brown color.

Cat-Bear-Cake?



I got a Hello Kitty cake pan from Wilton, and let's just say I wasn't very good at doing anything with it. For some odd reason, everything HK that I make turns into a bear. It's never an adorable bear either, this one just looks...off, but I didn't use parchment paper to lift it or anything. No matter though, the cake is absolutely moist and delicious and I love it.


(Cat-Bear-Cake Ingredients)

  • 1/4 cup Strong Brewed Coffee (you should probably cut down on that)
  • 1 cup Vegan Sweetener
  • 3 Cornstarch Eggs
  • 1/4 cup Cocoa Powder
  • 2 and 1/2 cups Cake Flour
  • 2 tsp Baking Soda (or a little less baking powder)
  • 1 cup of Soy Milk
  • 2 tsp Organic Apple Cider Vinegar (avoid if using powder)
  • 1 tsp Vanilla Extract
  • 1/2 cup Cold Coconut Oil
  • 1/2 tsp Iodized Salt

(Directions)
  • Cream the coconut oil and sugar together and slowly sift in the dry ingredients. Fold them into each other.
  • slowly add the wet ingredients until it is a medium-thick batter.
  • Place into a greased and parchment paper lined baking dish and tap onto a hard surface about 20 times.
  • at 350 degrees for about 30 minutes or until the knife comes out clean from the middle.
  • Let it rest of one hour, cover in coconut cream and berries or whatever you choose.
  • Enjoy!


Garden In A Bowl

It would have been better if I had used Romaine Lettuce, but I had none on hand. It was still extremely delicious and healthy though - it's great for light lunch! It doesn't require a recipe as it is very simple and quick to make. It consists of blueberries on the right side (to viewers), pistachios to the left and a piece of pan-fried tofu atop juicy tomatoes, crunchy onions and crisp lettuce. I added more to the meal later as I added thinly slice radish pieces, chunks of avocado and lots of tasty cucumbers. The tofu was coated in cumin, chili powder and a little bit of salt and pepper, seared on both sides and then crisped up even more in the oven. Add a dressing if you like, but it's definitely not necessary with this tasty meal.

I Prefer My Penguins Cold

I just found him like this - I swear, man! I can't go back to Antartica, I just..this is food? I knew that, I'm just practicing some...acting lessons. Yeah, acting. He's surrounded by tofu, salad,  rice and lots of bell peppers. Doesn't that sound tasty and not like evidence of some horrible penguin crime against nature? The answer is yes. Yes it does.


Penguin Components:
Nori Sheets (covering the penguin)
Brown Rice (on the inside)
White Rice mixed with Edamame (surrounding him)
Steamed Tofu (stomach and eyes)
Organic Sweet Peppers (Cheeks, feet, arms and strips:
Fried Tofu (Tofu Fish)

It's simple, the head of the penguin was formed by placing nori in a ramekin and filling it halfway with brown rice. Fold it carefully and seal the edges with water. Place a tiny bit of brown rice in the middle of half a nori sheet and fold it to form a body. Place that together and place it on top of the steamed rice mixed with Edamame. Take two red peppers and cut the tips off, wrap those in nori and place onto the body of the penguin. Take a small coffee straw and place it through one of the peppers for the cheeks, add that to the face and add some steamed tofu onto the stomach. Punch out (or cut out) pieces of nori for the eyes.

Take the leftover tofu and mix it with some mirin, salt and turmeric. You can add sugar if you want, and you can cut it into fish shapes if you like. To make it even cuter I did two "X" mark slashes on the sides, but if you have a small fish-shaped cutter than that can work well on its own. That's it - now eat the evidence!

Fake Steak and Tofu Eggs



This dish was made on a whim for breakfast as I had a lot of tofu left in the fridge and just a touch of vital wheat gluten. I made this Asian-style to make it a bit different but you can go any route you want. Get it? Route?



(Fake Steak Ingredients)

  • 1 package of Vital Wheat Gluten (I used Arrowhead Mills)
  • 1/8 cup Brown Sugar/Molasses
  • 1/2 tsp Soy Sauce (good quality)
  • A scant 1/2 cup Cold Beet Juice mixed with Water
  • 1/4 cup Cold Water
  • 3 tbl Extra-Virgin Olive Oil
  • Pepper to taste

(Directions)
  • Use about a third of the package so the outcomes of a larger amount might differ for you. Mix all of the wet ingredients (aside from the last water) together and shape as you like.
  • Mix the sugar/molasses with water and steam your seitan in it for about 30 minutes.
  • Once the thirty minutes are done and the water is evaporated, you can add the oil and begin to fry the seitan to your liking. Make sure to pepper it once you start this stage and to turn it around so that it gets crispy and crunchy.

  • Pair with the tofu eggs from Sushi Quest Part Two and enjoy!

Veganopolis
