Buffalo Chicken Seitan (Vegan Mofo)

This sandwich is really good and super big - as you can see from the seitan to bread ratio. As with all of my seitans, this is very juicy and filled with spicy flavor. Surrounding the seitan is a crisp and crunchy tempura and panko crust that makes it so good in capturing the spices and seasonings. To top it off it is baked with Sabra Brand garlic hummus, onions, kale and a delicious onion bun. I would suggest baking the sauce completely onto the seitan in an oven like I did with my second slice as it can easily irritate the system. Alright, let's get started! ^^

(Buffalo Chicken Seitan Ingredients)
  • 1 C. Vital Wheat Gluten (Bob's Red Mill)
  • 1 tbl. Garlic Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Paprika
  • 1. Tbl Veg. Oil
  • 1 C. Cold Water
  • 1/2 C. Hot Sauce
  • 1/4 C. Sriracha

(Vegan Hamburger Helper Directions)
  • Mix your dry ingredients together then knead in your wet ingredients, except for the sauces, for 35 turns.
  • Boil for 25 minutes, 10 of which covered with a pot top and the rest uncovered.
  • Split the seitan in half then coat in a vegan tempura batter such as this one.
  • Coat in crumbs and fry in a pan for 30 seconds on each side, then dip into your mixed hot sauces and bake in the oven until crisp. Add your hummus or vegan cheese, onions, kale and bake for a few more moments before serving it upon a toasted bun.

Enjoy!

Mr Bobinsky Bento (Coraline Bento)

Sergei Alexander Bobinski (aka Mr. Bobisnky) happens to be my favorite character from the book and movie "Coraline". How couldn't you love him? He's strong and athletic, handsome, blue and quite kind to Coraline - plus he loves vegetables (namely beets)! So, instead of me telling you what went into making this super fun I decided to call up Mr. Bobinsky himself! Take it away Bobo!

How do you feel about Mr. Bobinsky?

Bobinsky: Oh hello, Ms. Shine! What is it that I am to be taking away? This "benuto"?

Me: "Be-n-to" and yes, Mr. Bobinsky! Tell us how you really feel about it!

Bobinsky: Well let me first say that there are no beets in this bento. How can you have a strong Bobinsky bento without beets? They make you strong and able to aerodynamic! *lifts up small car and throws it* Do you see what I mean Ms. Shine? Otherwise this bento is fantastic and looks like Mr. Bobo himself! Those little mice are made of Russian Miysniy Bitki, yes? So inventive with the brown and white rice covering, cranberries (red, like beets), noree eyes, almond ears and soba noodle tails! The kale that surrounds it all added with the red grapes, cherry tomatoes, masa sheet, red and orange bell peppers and blue onigiri me are amazing! The tortilla you used for my shirt is eeehh, how I would say in my Mother tongue, vyglyadit krasivo. More tortilla for the eyes, some nori and boom! You've got a Bobinsky - eh? Ey, where's my badge from Chernobyl - I was there for the cleanup after the-

Me: Oh, lookie here we're out of time so soon! Thanks for visiting Mr. Bobinsky, I think that its time for you to go back to the Pink Palace!

Bobinsky: But I haven't even told you about my wonderful Mouse Circus improvements yet! Come with me - you must see how they go "Oompa peep" now! Halfway there I must say! *grabs Ms. Shin's hands*

Me: Maybe some other time - woah! See you next time and I hope that you enjoyed this segment of Coraline Bentos, everybody! If you need the list its at the bottooooooom - The tutorial for the mice is coming soon!

Red Grapes
Red and Yellow Bell Peppers

Low-Fat Thunder Cake with Avocado Icing

I first had Thundercake in the second grade, as most people have. I was so disgusted as the teacher read us a story about putting tomatoes into a chocolate cake. But I was entranced by the rest of the story (as rain is my favorite weather condition) and the description of it, so I gobbled my large slice down and was in heaven. It was absolutely chocolatey, fudgy and above all - moist. You couldn't even tell there were tomatoes in the cake and I as I side-eyed my teacher, I noticed the huge tin of tomatoes to the side of the empty cake mix box. I'm so sorry for doubting you, my wonderful teacher.

(Low-Fat Thunder Cake Ingredients)

  • 1 cup of Raw Sugar
  • 1 and 1/2 cups Cocoa Powder
  • 1 and 1/2 cups White Whole Wheat Flour
  • 1/2 tsp Baking Soda
  • 2 tsp Baking Powder
  • 1/4 tsp Salt
  • 1/2 cup of Black Chia Seeds (soaked in cold water)
  • 4 tbl of Coconut Oil
  • 1/4-1/2 cup of Veggie Oil
  • 1/2 can of Tomato Soup (or 3/4 cup of Pureed Tomatoes)
  • 1 cup of Non-Dairy Milk
  • 1 tsp of Apple Cider Vinegar
  • 1 scraped Vanilla Bean

(Avocado Icing Ingredients)

  • 2 Mashed Avocados
  • Juice of 1 Lemon or Orange (and a tsp of zest)
  • 1 pound of Icing Sugar

(Directions)
  • For the icing/frosting: Preheat oven at 350 degrees.
  • Mix together as you would with any other cream.
  • Place in the fridge to absorb flavors and then serve on top of cake later.

  • For the cake: Sift your dry ingredients (except the sugar and cocoa powder) together and set aside.
  • Then, cream together your sugar, the veggie oil and coconut oil.
  • Mix in your seeds once they have fully absorbed the water and then add in your tomato soup and cream together until the soup has blended somewhat.
  • Stir in all of your cocoa powder.
  • Alternate mixing in the rest of the wet and the dry ingredients.
  • Place into a cake pan, tap on the kitchen counter or table about 20 times and bake for about 45 minutes at 350 degrees or until you insert a toothpick and it comes out clean from the middle.
  • Let it rest for about 2 hours, serve with your frosting and enjoy.

Garden In A Bowl

It would have been better if I had used Romaine Lettuce, but I had none on hand. It was still extremely delicious and healthy though - it's great for light lunch! It doesn't require a recipe as it is very simple and quick to make. It consists of blueberries on the right side (to viewers), pistachios to the left and a piece of pan-fried tofu atop juicy tomatoes, crunchy onions and crisp lettuce. I added more to the meal later as I added thinly slice radish pieces, chunks of avocado and lots of tasty cucumbers. The tofu was coated in cumin, chili powder and a little bit of salt and pepper, seared on both sides and then crisped up even more in the oven. Add a dressing if you like, but it's definitely not necessary with this tasty meal.

Enjoy!
